Ingredients (makes 20 bars):

  • 150 g natural peanut butter

  • 150 g finely chopped unsalted mixed nuts

  • 150 g soaked dates

  • 80 ml agave syrup

  • 30 g almond flour

  • 1 tbsp coconut oil

  • 80 g shredded coconut

  • Sesame seeds (for topping)

Instructions

  1. Prepare the tin
    Line a brownie tin (20x20 cm) with parchment paper.

  2. Make the date paste
    Chop the dates into small pieces, add 25 ml water, and blend in a food processor until smooth and lump-free.

  3. Mix the ingredients
    In a large bowl, combine the date paste with peanut butter, agave syrup, almond flour, shredded coconut, and 1 tablespoon coconut oil. Mix well until you get a sticky, uniform dough.

  4. Press into the tin
    Spread the mixture evenly in the tin and press it down firmly with the back of a spoon or your hands.

  5. Chill
    Place the tin in the fridge for at least 3 hours to set.

  6. Add the topping
    Toast the sesame seeds in a dry pan until golden and let them cool. Remove the mixture from the fridge, cut into 20 equal bars, and roll each bar in the sesame seeds until fully coated.

  7. Serve & enjoy
